Recipe: Asparagus and Crottin de Pays Tart

  • 1 puff pastry
  • 200g pie crottin, cut into slices
  • 250g green asparagus, cleaned and cut into pieces
  • 2 eggs
  • 100ml cream (fresh cream)
  • Salt and pepper to taste
  • Extra virgin olive oil


  1. Preheat the oven to 200°C.
  2. Spread the puff pastry in a tart pan and prick the bottom with a fork.
  3. Place the pie crottin slices on the puff pastry dough.
  4. In a skillet, sauté the asparagus in a little olive oil until tender but still crisp. Season with salt and pepper to taste.
  5. Distribute the asparagus over the pie crottin in the cake.
  6. In a bowl, beat the eggs with the cream and pour this mixture over the asparagus.
  7. Bake the tart in the preheated oven for 25-30 minutes, or until the crust is golden brown and the egg mixture is set.
  8. Serve hot and enjoy this delicious combination of French flavors and seasonal products.
