This butternut squash recipe is a simple and delicious dish that combines the sweet flavor of butternut squash with the richness of Brillat Savarin cheese, the crunch of walnuts, and the fresh flavor of chives. It is an excellent option for a quick and easy to prepare lunch or dinner.
Ingredients:
- 1 butternut squash
- 100g Brillat Savarin cheese
- 1/2 cup chopped walnuts
- 2 tablespoons chopped fresh chives
- 2 tablespoons olive oil
- Salt and pepper
Instructions:
Preheat the oven to 200°C.
Cut the butternut squash in half lengthwise and remove the seeds.
Brush the squash with olive oil and season with salt and pepper.
Place the squash on a baking sheet and roast in the oven for about 40-45 minutes, until tender and golden.
While the squash is cooking, chop the walnuts and chives and set aside.
When the squash is ready, remove it from the oven and add the Brillat Savarin cheese to the top of each half.
Sprinkle the walnuts and chives over the cheese and return the squash to the oven for 5 to 7 minutes, until the cheese is melted and lightly browned.
Serve hot and enjoy!
