As autumn spreads its layer of colorful leaves, our taste buds demand comforting flavors. Let me guide you in preparing a soup that will awaken your senses and warm your nights: pumpkin soup with goat cheese.
Ingredients :
- 1 kg pumpkin (butternut, pumpkin or pumpkin), peeled and cut into cubes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium potato, peeled and cut into cubes
- 1 liter of vegetable broth (or chicken, if you prefer)
- 150 g fresh goat cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Liquid cream to serve (optional)
- Fresh herbs to decorate (chives, thyme or parsley)
- Croutons or nuts to add crunch (optional)
Instructions :
Prepare the vegetables: start by peeling and cutting the pumpkin into cubes, cut the onion and chop the garlic. Don't forget the potato, which will give thickness to your soup.
Sauté: Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté until soft and transparent.
Cook vegetables: Add the pumpkin and potato cubes to the pan and let them take on a little color. This is where the magic begins, the juices are released and the flavors develop.
Simmer: Pour the hot broth over the vegetables and bring to a boil. Then simmer until the vegetables are very tender, this will take around 20 minutes.
Blend: Using a hand blender or traditional blender, blend the soup until smooth and velvety.
Cheese Finish: Add the goat cheese and stir until completely melted. Season with salt and pepper to taste.
Service: Serve the soup hot with, if desired, a splash of liquid cream. Garnish with freshly chopped herbs, add a handful of croutons or nuts for contrast.
