Vinification
- Harvest: manual and mechanical.
- Fermentation time: 24 to 30 days.
- Fermentation time: 4 to 5 days.
- Maceration time: 20 to 25 days.
- Fermentation control: thermoregulated cement vats.
- Malolactic fermentation: 10% in oak barrels.
The aging of the wines continues for 12 months in oak barrels, renewed in thirds each year. The final blend is then carried out, before a light clarification, then bottling takes place in the castle.
