VINEYARD
Sauvignon grape variety, worked on soils dominated by schist, these plots are managed in a reasonable and sustainable way. These vineyards have been planted since 2000, always in search of a diversity that enriches everyone.
VINIFICATION
Traditional vinification with cold temperature control to maximise the aromas so typical of Sauvignon. The wine is then aged on fine lees to preserve this fruit and freshness.
TASTING NOTES
Nose: blackcurrant buds, lychee, white fruits
Colour: Pale gold with green hues
Palate: Honest and sweet attack. A wine with a complex and supple aromatic palette. Peach, pear, with a slightly minty, even aniseed-like finish.
It can be kept for 3-4 years.
It is quite a surprising wine, because over time it will reveal different facets of its personality... young and playful in spring with its floral side, then it will stabilise to move on to honeyed notes in winter... A delight!
Seafood, fish in sauce, light tart or even as an aperitif.
