Domaine de Vigier is located in the hills above the village of Saint-Thomé, in the Ardèche wine region. This 27-hectare family estate has been certified organic since 2019.

VINIFICATION
Manual harvest in 20 kg crates, selection on the vine and on the table. Vinification with whole bunches without yeast. Pre-fermentative cold maceration lasts 5 days, followed by alcoholic fermentation for 10 days at controlled temperature (23°C). Post-fermentation maceration for 10 days, followed by ageing in concrete vats for 6 months.
TASTING
Deep red colour, almost black with purple reflections.
Powerful and elegant nose of black fruits (blackcurrant, blackberry) and mild spices.
Full and fleshy on the palate with silky tannins. The black fruit aromas are confirmed on the palate, accompanied by notes of pepper and liquorice. Beautiful aromatic persistence on the finish.
FOOD PAIRING
This wine will pair perfectly with grilled or sauced red meat, sauced dishes, cheese platters or dark chocolate desserts. Serve between 16°C and 18°C.
