The Domaine
The Domaine l'Enclos is located in Eauze, in the Gers. Initially dedicated to polyculture and the production of Armagnac, today the domaine is focused on the production of Côtes de Gascogne wines. The vines are planted on the green hills northwest of Eauze, where sandy-clay soils alternate with sandy soils called "sables fauves". The L'ENCLOS vineyard is committed to a policy of quality: traditional varieties, sustainable cultivation and a constant evolution in the methods and means of vinification, to offer you a range of tasty and varied wines... to discover!
The wine
This variety is harvested at the right point of ripeness (and not over-ripe) when its musts reach 14 degrees. Slow fermentation stops when the wine reaches 12.5%. Then, naturally, residual sugars remain which, added to the effect of storage on fine lees, will give the wine body and structure.
