Vinification: fermentation in temperature-controlled stainless steel tanks, aged for 10 months on fine lees and bottled in the cellar.
Vine cultivation: pruning in guyot Chablis, with a density of 5500 feet per hectare and controlled thinning.
Vineyard: 3 hectares, with vines of an average age of 30 to 40 years.
Tasting notes: Bright pale yellow colour. Pleasant notes of white flowers, meadow and a mineral background on the nose. In the mouth, its attack is frank, straight, fresh and lively. The mineral accents are enriched with a lemony dimension.
Food pairing: This wine can be enjoyed with bouchées à la reine, fish in sauce or local cheeses such as soumaintrain.
Aging: 1 to 8 years.
Serving temperature: 12-15°C.
