The two main varieties used are the noble varieties of the Loire: Cabernet Franc, for the Saumur, which grows ideally in clay-calcaire soils and a northern climate, producing fine and elegant wines, and Chenin Blanc for the Coteaux du Layon. on shale soil and the Saumur Blanc and Fines Bulles on Argilo Calcaire, the "Tuffeau". The latter has been fundamental in the construction of the Loire castles.
