The winegrower: Olivier Cuilleras
Terroir: Resting on the southern slopes of the Dentelles de Montmirail massif, the terroir is made up of black marl, composed of silt, clay and sand.
Grapes: 70% Grenache Noir, 10% Syrah and 10% Cinsault.
Vinification:
Traditional vinification with destemming. 3 weeks of vatting, manual punching down.
Ageing: Concrete tank
Vintage wines
Colour: violet reflections, limpid and crystalline.
Nose: The first nose reveals aromas of black fruits, spices and dried fruits; it then opens up with notes of chestnut and blackcurrant.
Palate: The attack on the palate is sweet, the tannins are round and the finish offers notes of liquorice.

Meat or cheese, sautéed chicken, rib of beef.
