Yield: 48 hl/ha

Age of vines: 70-75 years old

Harvest: Manual + vineyard and cellar selection

Vinification:
destemmed at 75%; Alcoholic fermentation then malolactic fermentation; Pigeage and moulting; T° control below 30° .

Ageing: Ageing on fine lees for 20 months in renewed barrels.
