Mont d'Or is a soft French cheese with a washed rind, made from raw cow's milk. Its most distinctive feature is that it comes in a spruce bark wrapper, giving it a unique appearance. It has a creamy and melting texture with a smooth and velvety flavor.
To enjoy Mont d'Or, it is advisable to remove it from the refrigerator an hour before consuming it, so that it reaches room temperature. You can then remove the top of the spruce bark and use a spoon to scoop up the melted part of the cheese. Mont d'Or is delicious served hot with steamed potatoes, bread, charcuterie and accompanied by a good white or red wine.
Mont d'Or pairs well with dry white wines from the Jura region, such as Chardonnay or Savagnin. These wines complement the cheese's creamy texture and earthy flavors. If you prefer a red wine, you can choose a Pinot Noir, which has a mild acidity and a fruity flavor that contrasts very well with the flavor of the cheese. In general, a light to medium wine is recommended to accompany Mont d'Or.
Its washed rind is rough, cream to pink-orange in color with white molds, depending on ripening. It is an unctuous and creamy cheese, or very fluid, white to ivory. The more wrinkled, the more delicate it is in its heart. Namely: the waves visible at the top of the Mont d'Or are due to the molding of the cheese, the size of which is larger than the box that contains it.
